Prepare the Dates

Preheat your oven to 200°C (400°F). Slice each date lengthwise without cutting all the way through and remove the pit.

Stuff the Dates

Take a small amount of sausage and stuff it into each date. Press the dates closed.

Wrap in Bacon

Cut each slice of bacon in half and wrap each stuffed date with a half slice of bacon. Secure with a toothpick if necessary.

Bake the Dates

Place the wrapped dates on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Bake for about 20-25 minutes, or until the bacon is crispy.

Prepare the Piquillo Pepper Sauce

While the dates are baking, blend the piquillo peppers with a splash of olive oil until smooth. Season with salt and pepper to taste.

Serve

Once the dates are done, remove them from the oven and let them cool slightly. Serve warm with the piquillo pepper sauce drizzled on top or on the side.
