Method

Cooking the Pasta

  1. 1

    Boil the Macaroni

In a large pot, bring salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Preparing the Cheese Mixture

  1. 2

    Mix the Cheese

In a mixing bowl, combine the cooked macaroni, 1 cup of shredded sharp cheddar cheese, 4 oz of softened cream cheese, 1 cup of grated Parmesan cheese, 2 tbs of truffle oil, 0.5 tsp of salt, and 0.25 tsp of black pepper. Mix well until everything is evenly coated.

Forming the Bites

  1. 3

    Shape the Mixture

Using your hands, take a small amount of the cheese and macaroni mixture and roll it into bite-sized balls or patties. Place them on a baking sheet lined with parchment paper.

Breading the Bites

  1. 4

    Prepare for Breading

Set up three bowls: one with 0.5 cup of flour, the second with 2 beaten eggs, and the third with 1 cup of breadcrumbs. Dip each bite first into the flour, then into the egg, and finally coat with breadcrumbs.

Frying the Bites

  1. 5

    Heat the Oil

In a deep frying pan, heat 2 cups of vegetable oil over medium heat until hot.

  2. 6

    Fry the Bites

Carefully add the breaded bites into the hot oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Serving

  1. 7

    Serve Warm

Serve the truffle mac bites warm, optionally drizzled with extra truffle oil and garnished with parsley.
