Jerk Chicken Preparation

    Marinate the Chicken

    In a large bowl, combine the jerk seasoning, olive oil, and lime juice. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing.

Black Bean Corn Salsa Preparation

    Combine Ingredients

    In a medium bowl, combine the black beans, sweet corn, diced red onion, chopped cilantro, lime juice, salt, and black pepper. Mix well and set aside.

Cabbage Slaw Preparation

    Prepare the Slaw

    In a large bowl, combine the shredded cabbage, shredded carrot, apple cider vinegar, honey, and salt. Toss until well combined and let sit for 10 minutes for flavors to meld.

Chipotle Aioli Preparation

    Make the Aioli

    In a small bowl, mix together the mayonnaise, minced chipotle, and lime juice until smooth. Adjust seasoning to taste and set aside.

Taco Assembly

    Assemble the Tacos

    Warm the corn tortillas on a skillet or grill. To assemble, place sliced jerk chicken on each tortilla, top with black bean corn salsa, cabbage slaw, and drizzle with chipotle aioli. Serve immediately.
