Beef Braise

    Prepare the Peppers

    Remove the stems and seeds from the dried guajillo and ancho peppers. Place them in a bowl and cover with hot water to soak for about 15 minutes until they soften.

    Sauté the Aromatics

    In a large pot, heat a splash of oil over medium heat. Add diced onion and minced garlic cloves, sauté until translucent.

    Blend the Marinade

    In a blender, combine the soaked peppers, sautéed onion and garlic, cumin, oregano, salt, and black pepper. Blend until smooth.

    Braise the Beef

    Add the chuck roast to the pot, sear on all sides until browned. Pour the blended marinade over the meat and add the beef broth. Bring to a boil, then reduce heat, cover, and simmer for about 3 hours until the meat is tender.

    Shred the Beef

    Once cooked, remove the meat from the pot and shred it using two forks. Reserve the broth for dipping sauce.

Tacos

    Prepare the Tortillas

    In a skillet, warm the corn tortillas one at a time over medium heat for about 30 seconds each side until pliable.

    Assemble the Tacos

    Place a generous amount of shredded beef on each tortilla, sprinkle with cheddar jack cheese, and fold the tortilla over.

    Finish Cooking

    Return the assembled tacos to the skillet and cook each side for about 1-2 minutes until the cheese is melted and tortilla is crispy.

Coleslaw

    Prepare the Vegetables

    Shred the green cabbage and grate the carrot. Combine in a bowl.

    Make the Dressing

    In a separate bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Combine and Chill

    Pour the dressing over the cabbage and carrot mix, toss until well combined. Refrigerate for at least 30 minutes before serving.

Birria Dipping Sauce

    Prepare the Sauce

    In a small bowl, mix the reserved beef broth with lime juice. Adjust seasoning if necessary.

    Garnish

    Finely chop fresh cilantro and sprinkle over the sauce before serving.
