    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them sit at room temperature for 30 minutes before cooking. This helps them cook evenly.

    Season the Steaks

    Rub both sides of the steaks with olive oil, then sprinkle salt and black pepper evenly over both sides.

    Prepare Garlic and Rosemary

    Mince the garlic cloves and set aside. Have the rosemary sprigs ready for use.

    Preheat the Pan

    Heat a cast-iron skillet or heavy frying pan over high heat for about 5 minutes until it's very hot.

    Sear the Steak

    Add the seasoned steaks to the hot pan. Sear the steaks for about 3-4 minutes without moving them, allowing a crust to form.

    Add Garlic and Rosemary

    Flip the steaks over and add the minced garlic and rosemary sprigs to the pan. Cook for another 3-4 minutes for medium-rare, adjusting the time if your preference is different.

    Baste the Steaks

    Tilt the pan slightly and use a spoon to baste the steaks with the melted fat and garlic for added flavor.

    Rest the Steaks

    Remove the steaks from the pan and transfer them to a cutting board. Let them rest for 5-10 minutes to allow juices to redistribute.
