Prepare the Short Ribs
Preheat your oven to 160°C (320°F). Pat the short ribs dry with paper towels and season them with salt and black pepper. Dust each rib lightly with flour.

Sear the Short Ribs
In a large, heavy-bottomed pot or Dutch oven, heat some olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the short ribs and set aside.

Prepare the Cream Sauce
Once the short ribs are done, remove them from the pot and set aside. Strain the cooking liquid into a saucepan, discarding the solids. Bring the liquid to a simmer and stir in the heavy cream, truffle oil, and lemon juice. Reduce until thickened, about 10 minutes.

Serve
Plate the short ribs, spoon the mushroom and cream sauce over the top, and garnish with fresh herbs. Serve hot.
