Method
Preparation
- 1
Prepare the Salmon
Season both sides of the salmon fillets with salt and black pepper.
Cooking
- 2
Sear the Salmon
In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down and sear for about 4-5 minutes until golden brown. Flip the fillets and cook for an additional 3-4 minutes. Remove the salmon from the skillet and set aside.
- 3
Make the Sauce
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for about 2-3 minutes until reduced by half.
- 4
Add Lemon and Capers
Stir in the lemon juice and capers, and let the sauce cook for another minute.
- 5
Finish the Sauce
Reduce the heat to low and add the butter, stirring until melted and the sauce is smooth.
- 6
Combine and Serve
Return the salmon fillets to the skillet, spoon the sauce over them, and cook for an additional 1-2 minutes until heated through. Garnish with fresh parsley before serving.
