Pork Tenderloin

Method

Preparing the Pork Tenderloin

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Season Pork

    Pat the pork tenderloin dry with paper towels. Season generously with salt and black pepper on all sides.

    Wrap in Prosciutto

    Lay the slices of prosciutto on a clean surface, slightly overlapping. Place the seasoned pork tenderloin on top and wrap the prosciutto around the pork, covering it completely.

    Sear the Pork

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the wrapped pork tenderloin and sear on all sides until golden brown, about 2-3 minutes per side.

    Add Sage

    Once the pork is seared, add the fresh sage leaves to the skillet. Transfer the skillet to the preheated oven.

    Roast

    Roast the pork tenderloin in the oven for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

    Rest the Pork

    Remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Making the Marsala Mushroom Sauce

    Sauté Shallots and Garlic

    In the same skillet used for the pork, add the chopped shallots and minced garlic. Sauté over medium heat until they are soft and fragrant, about 2-3 minutes.

    Cook Mushrooms

    Add the sliced mushrooms to the skillet and cook until they are browned and their moisture has evaporated, about 5-7 minutes.

    Deglaze with Marsala

    Pour in the Marsala wine, scraping up any browned bits from the bottom of the skillet. Allow it to simmer for 3-4 minutes.

    Add Broth and Cream

    Stir in the chicken broth and bring to a gentle simmer. Stir in the heavy cream and let the sauce reduce slightly, about 5 minutes.

    Finish with Butter and Parsley

    Remove the skillet from heat and stir in the butter and chopped parsley until the butter is melted and the sauce is smooth.
