Preparation of Poblano Peppers

    Roast the Poblano Peppers

    Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven for about 20 minutes, turning occasionally, until the skin is blistered and charred.

    Cool and Peel

    Once roasted, remove the peppers from the oven and let them cool for a few minutes. Once cool enough to handle, peel off the charred skin, remove the seeds, and chop the peppers finely.

Burger Mixture

    Prepare the Black Bean Mixture

    In a large bowl, mash the canned black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the chopped roasted poblano peppers, breadcrumbs, chopped onion, minced garlic, ground cumin, chili powder, salt, black pepper, and egg to the mashed black beans. Mix everything together until well combined.

Cooking the Burgers

    Form the Patties

    Divide the mixture into 2 equal portions and shape each portion into a patty.

    Cook the Patties

    In a skillet over medium heat, heat the olive oil. Once hot, add the patties and cook for about 5-6 minutes on each side or until they are golden brown and heated through.

Assembling the Burger

    Prepare the Buns

    While the patties are cooking, slice the whole grain burger buns in half and toast them lightly if desired.

    Assemble the Burger

    On the bottom half of each bun, layer the lettuce leaves, followed by the cooked black bean patty, tomato slices, avocado slices, and cheddar cheese if using. Top with the other half of the bun.
