Soup Preparation

    Sauté Onions

    In a large heavy-bottomed pot, melt the butter over medium heat. Add the thinly sliced onions and sauté, stirring frequently, until they are deeply caramelized and golden brown, about 30-40 minutes.

    Add Garlic

    Once the onions are caramelized, add the minced garlic and sauté for an additional 2-3 minutes until fragrant.

    Add Broth and Wine

    Pour in the beef broth and dry white wine. Stir to combine all ingredients.

    Season the Soup

    Add dried thyme, bay leaf, salt, and black pepper to the pot. Stir well and bring the mixture to a gentle boil.

    Simmer

    Lower the heat and let the soup simmer for 30 minutes, allowing the flavors to meld together.

    Remove Bay Leaf

    After simmering, remove the bay leaf from the soup and discard.

Serving Preparation

    Toast Bread

    While the soup is simmering, preheat your oven to 400°F (200°C). Place the slices of French bread on a baking sheet and toast in the oven for about 10 minutes, until golden brown.

    Assemble Soup

    Ladle the hot soup into oven-safe bowls, filling them about ¾ full.

    Add Bread and Cheese

    Place a slice of toasted French bread on top of each bowl of soup, then generously sprinkle Gruyère and Parmesan cheese over the bread.

    Place the bowls on a baking sheet and broil in the oven for 3-5 minutes, or until the cheese is bubbly and golden brown.
