Preparation

    Prepare the Ingredients

    Cut the beef chuck roast into 1.5-inch cubes. Season with salt and black pepper. Clean and slice the mushrooms. Peel and slice the carrots. Peel the pearl onions.

Cooking

    Brown the Bacon

    In a large Dutch oven or heavy pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the fat in the pot.

    Brown the Beef

    In the same pot, add the seasoned beef cubes in batches, browning them on all sides. Remove the browned beef and set aside.

    Sauté Vegetables

    Add the pearl onions, sliced carrots, and mushrooms to the pot. Sauté for about 5-7 minutes until the vegetables start to soften.

    Add Aromatics

    Stir in the minced garlic, fresh thyme, and bay leaves. Cook for an additional 2 minutes until fragrant.

    Combine Ingredients

    Return the browned beef and bacon to the pot. Pour in the red wine and beef broth, scraping the bottom of the pot to deglaze and incorporate all the browned bits. Bring to a simmer.

    Slow Cook

    Cover the pot and reduce the heat to low. Allow the beef bourguignon to simmer gently for about 2.5 to 3 hours, until the beef is fork-tender and the flavors meld.

    Serve

    Once cooked, remove the bay leaves. Adjust seasoning with salt and pepper if necessary. Serve the beef bourguignon over your choice of mashed potatoes, egg noodles, or crusty bread.
