Preparation of Fish

    Prepare the batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and beer. Whisk until smooth and set aside for 15 minutes.

    Pat the cod fillets dry with paper towels. This helps the batter adhere better. Season with a pinch of salt and pepper.

Preparation of Chips

    Cut the potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

    Soak the potatoes

    Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Frying

    Fry the chips

    Heat 4 cups of vegetable oil in a deep fryer or a large pot to 325°F (163°C). Fry the potato strips in batches for about 5-7 minutes until they are soft but not browned. Remove and drain on paper towels.

    Increase the oil temperature to 375°F (190°C). Dip each cod fillet into the batter, allowing the excess to drip off, then carefully lower into the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.
