Fish Preparation

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Slowly whisk in the cold beer (or sparkling water) until the batter is smooth and has no lumps.

Heat the Oil
In a deep frying pan or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Batter and Fry the Cod
Dip each cod fillet into the batter, allowing the excess to drip off. Carefully place the battered fillet into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the russet potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch.

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry. Fry them in the hot oil for about 5-7 minutes until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.
Tartar Sauce Preparation

Mix the Ingredients
In a small bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, salt, and black pepper. Mix well and refrigerate until ready to serve.
Coleslaw Preparation

Combine the Ingredients
In a large bowl, mix shredded green cabbage and shredded carrot.

Prepare the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Toss the Coleslaw
Pour the dressing over the cabbage and carrot mixture. Toss until everything is well coated. Chill in the refrigerator for at least 30 minutes before serving.
