Method

Preparing the Baked Cod

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Season the Cod

    Place the cod fillets in a baking dish. Drizzle with olive oil and lemon juice. Sprinkle with salt and black pepper.

Making the Seafood Stuffing

    Sauté Vegetables

    In a skillet, melt the butter over medium heat. Add the chopped celery and onion. Sauté until softened, about 5 minutes.

    Combine Ingredients

    Stir in the cooked shrimp and Old Bay seasoning. Add the seafood stuffing mix and chicken broth. Mix until combined.

    Stuff the Cod

    Spoon the seafood stuffing mixture over the seasoned cod fillets in the baking dish.

Baking the Cod

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10-15 minutes, until the cod is cooked through and flakes easily.

    In a large pot, cover the cubed potatoes with water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add minced garlic, butter, milk, and salt. Mash until creamy and smooth.

Sautéing the Vegetables

    In a separate skillet, heat olive oil over medium heat. Add sliced bell peppers and zucchini. Season with salt and pepper. Sauté until tender, about 5-7 minutes.

    Serve the baked cod on a plate over a bed of garlic mashed potatoes, accompanied by the sautéed vegetables.
