Prepare the Rice

Cook the Arborio Rice
In a medium saucepan, bring the vegetable broth to a simmer. In a separate pan, heat a tablespoon of oil over medium heat. Add the shallot and garlic, cooking until softened, about 3 minutes. Stir in the Arborio rice and cook for another 2 minutes.

Gradually add the simmering vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more. This process should take about 20 minutes until the rice is creamy and al dente.

Mix in Mushrooms and Cheese
Remove the rice from heat and stir in the dried porcini mushrooms (previously soaked and chopped), fresh diced mushrooms, grated Parmesan cheese, salt, and black pepper. Allow the mixture to cool completely.

Once the rice mixture has cooled, scoop approximately 2 tablespoons of the mixture into your hands and form it into a ball, ensuring that it is compact. Repeat with the remaining mixture.

Dredge each ball first in flour, shaking off excess, then dip in the beaten eggs, and coat with breadcrumbs, pressing gently to adhere.
