Rice Mixture

Breading

Method

Prepare the Rice

  1. 1

    Cook the Arborio Rice

In a medium saucepan, bring the vegetable broth to a simmer. In a separate pan, heat a tablespoon of oil over medium heat. Add the shallot and garlic, cooking until softened, about 3 minutes. Stir in the Arborio rice and cook for another 2 minutes.

  2. 2

    Add Liquid

Gradually add the simmering vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more. This process should take about 20 minutes until the rice is creamy and al dente.

  3. 3

    Mix in Mushrooms and Cheese

Remove the rice from heat and stir in the dried porcini mushrooms (previously soaked and chopped), fresh diced mushrooms, grated Parmesan cheese, salt, and black pepper. Allow the mixture to cool completely.

Prepare the Breading

  1. 4

    Set Up Breading Station

In three shallow dishes, place the all-purpose flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

Form and Fry Arancini

  1. 5

    Shape the Arancini

Once the rice mixture has cooled, scoop approximately 2 tablespoons of the mixture into your hands and form it into a ball, ensuring that it is compact. Repeat with the remaining mixture.

  2. 6

    Coat the Balls

Dredge each ball first in flour, shaking off excess, then dip in the beaten eggs, and coat with breadcrumbs, pressing gently to adhere.

  3. 7

    Heat Oil

In a large pot, heat the vegetable oil to 350°F (175°C).

  4. 8

    Fry the Arancini

Carefully add the arancini in batches, frying for about 3-4 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.
