Jerk Chicken

Method

Jerk Chicken

  1. 1

    Marinate the Chicken

In a bowl, combine the jerk seasoning, olive oil, lime juice, and minced garlic. Mix well to create a marinade.

  2. 2

    Coat the Chicken

Add the chicken thighs to the marinade and coat them thoroughly. Cover and refrigerate for at least 1 hour or overnight for better flavor.

  3. 3

    Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken thighs for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest.

Cajun Rice

  1. 4

    Sauté Vegetables

In a saucepan, heat olive oil over medium heat. Add the diced onion and bell pepper, sauté until the onion becomes translucent.

  2. 5

    Cook the Rice

Add the long-grain rice to the saucepan and stir for a minute. Then add the chicken broth and Cajun seasoning. Bring to a boil, reduce to a simmer, and cover. Cook for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Black Bean Corn Salsa

  1. 6

    Combine Ingredients

In a bowl, combine the rinsed black beans, corn, halved cherry tomatoes, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

Chipotle Aioli

  1. 7

    Mix Aioli

In a small bowl, whisk together the mayonnaise, minced chipotle peppers, minced garlic, and lime juice until smooth. Adjust seasoning to taste.
