Grilled Cheese Sandwich

Prepare the Sandwich
Begin by laying out the slices of brioche bread on a clean surface.

Add Cheese
Evenly distribute the brie, cheddar, and Swiss cheese onto two slices of brioche.

Close the Sandwich
Top the cheese with the remaining slices of brioche to form two sandwiches.

Butter the Bread
Spread 1 tablespoon of unsalted butter on the outer side of each sandwich.

Slice and Serve
Once cooked, remove the sandwiches from the skillet, slice them in half, and set aside while you prepare the soup.

Add Tomatoes
Pour in the canned whole tomatoes (including juice) and stir to combine. Allow to simmer for about 5 minutes.

Add Broth
Add the vegetable broth to the pot and bring to a boil. Reduce heat and let it simmer for 15-20 minutes.

Blend the Soup
Use an immersion blender to puree the soup until smooth. If using a regular blender, let the soup cool slightly before blending in batches.

Add Cream and Season
Stir in the heavy cream and season with salt and black pepper to taste. Add chopped fresh basil.

Ladle the tomato bisque into bowls and serve alongside the grilled cheese sandwiches.
