Method
Prepare the Cauliflower

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare Cauliflower
Wash and cut the cauliflower into bite-sized florets.
Breading and Roasting

Make the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and water. Whisk until smooth.

Coat Cauliflower
Dip each cauliflower floret into the batter, allowing excess to drip off.

Roast Cauliflower
Place the coated florets on a baking sheet lined with parchment paper. Bake for 20 minutes until golden brown, flipping halfway.
Fry the Cauliflower

Heat Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Flash Fry
Carefully add the roasted cauliflower florets to the hot oil in batches. Fry for 2-3 minutes until crispy. Remove and drain on paper towels.
Prepare the Sauce

Combine Ingredients
In a saucepan, mix soy sauce, rice vinegar, sugar, minced ginger, minced garlic, red pepper flakes, and sesame oil. Heat over medium heat until sugar dissolves.
Serve

Combine and Garnish
In a large bowl, toss the flash-fried cauliflower with the sauce until evenly coated. Transfer to a serving plate and garnish with sliced green onions.
