Method

Prepare the Potatoes

  1. 1

    Peel and Cut Potatoes

Peel the russet potatoes and cut them into uniform chunks, about 1-2 inches in size.

  2. 2

    Boil Potatoes

Place the potato chunks in a large pot and cover them with water. Add 1 tsp of salt. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 15-20 minutes.

  3. 3

    Drain Potatoes

Once the potatoes are tender, drain them in a colander and set aside.

Prepare the Garlic Whip

  1. 4

    Melt Butter

In a small saucepan, melt the unsalted butter over medium heat.

  2. 5

    Sauté Garlic

Once the butter is melted, add the minced garlic cloves and sauté for 1-2 minutes until fragrant but not browned.

  3. 6

    Add Cream

Pour in the heavy cream and stir to combine. Bring the mixture to a simmer and let it cook for 3-4 minutes until slightly thickened.

  4. 7

    Season the Whip

Add black pepper to the garlic cream mixture and stir well to combine. Remove from heat.

Combine and Serve

  1. 8

    Mash Potatoes

Return the drained potatoes to the pot. Pour the garlic whip mixture over the potatoes and use a potato masher to mash until smooth and creamy.

  2. 9

    Garnish

Transfer the garlic whip mash to a serving bowl. Drizzle with olive oil and sprinkle with chopped chives for garnish.
