Method

Soup Preparation

  1. 1

    Sauté the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced yellow onions and sauté for about 25-30 minutes, stirring occasionally, until they are caramelized and golden brown.

  2. 2

    Add Garlic and Deglaze

Add minced garlic and cook for another 2 minutes until fragrant. Pour in the white wine to deglaze the pot, scraping the bottom to release any flavorful bits. Allow the wine to reduce by half.

  3. 3

    Simmer the Soup

Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes, allowing the flavors to meld.

Crostini Preparation

  1. 4

    Prepare the Baguette

While the soup is simmering, preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices.

  2. 5

    Toast the Baguette Slices

Brush both sides of the baguette slices with olive oil and sprinkle garlic powder on top. Arrange them on a baking sheet and toast in the oven for about 8-10 minutes, or until golden and crispy.

Assembly and Serving

  1. 6

    Serve the Soup

Remove the bay leaf from the soup. Ladle the hot soup into bowls, placing the toasted crostini on top.

  2. 7

    Add Cheese

Generously sprinkle the hand-grated Swiss cheese over the crostini and soup. For an extra touch, you can place the bowls under the broiler for a couple of minutes to melt the cheese.
