Eggplant Preparation

Slice the Eggplant
Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.

Salt the Eggplant
Sprinkle salt over the eggplant slices and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Breading
Set up a breading station: Place the flour in one bowl, beaten eggs in another bowl, and breadcrumbs mixed with parmesan cheese in a third bowl.

Bread the Eggplant
Dip each eggplant slice first in flour, then in the beaten eggs, and finally coat with the breadcrumb mixture.

Bake the Eggplant
Place the breaded eggplant slices on a baking sheet and bake in the preheated oven for about 20 minutes or until golden brown, flipping halfway through.

Cook the Spinach
In a skillet over medium heat, sauté the fresh spinach until wilted. Let it cool slightly, then chop finely.

Mix the Filling
In a mixing bowl, combine the ricotta cheese, sautéed spinach, chopped basil, chopped parsley, salt, and black pepper. Stir until well combined.

Spread Marinara Sauce
In a baking dish, spread 1 cup of marinara sauce evenly on the bottom.

Roll the Eggplant
Take a breaded eggplant slice, place about 2 tablespoons of the ricotta filling at one end, and roll it up. Place seam side down in the baking dish.

Repeat and Top with Sauce
Repeat the rolling process for all eggplant slices. Once all are in the dish, pour the remaining marinara sauce over the top and sprinkle with shredded mozzarella cheese.

Bake the Rollatini
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
