Preparation

Roast the Garlic
Preheat the oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for about 30-35 minutes until soft. Allow to cool, then squeeze the roasted garlic out of the skins.

Prepare the Tomato Base
In a large skillet, heat the extra virgin olive oil over medium heat. Add the canned fire-roasted tomatoes and cook for about 10 minutes, stirring occasionally, until heated through.

Add Roasted Garlic
Once the tomatoes are heated, add the roasted garlic to the skillet. Stir well to combine and let it simmer for an additional 5 minutes.

Chop the Basil
While the tomato and garlic mixture simmers, wash and chop the fresh basil leaves. Set aside.

Prepare the Mozzarella
Slice the fresh mozzarella into bite-sized pieces and set aside.

Combine Ingredients
Once the tomato and garlic mixture is ready, remove it from heat. Stir in the chopped basil and season with salt and pepper to taste.

Serve
In a serving dish, layer the tomato and garlic mixture and top with slices of fresh mozzarella. Drizzle with additional olive oil if desired and garnish with extra basil leaves.
