Fish Tacos

    Prepare the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and cold water. Whisk together until smooth.

    Fry the Cod

    In a large skillet, heat vegetable oil over medium-high heat. Dip cod fillets into the batter and carefully place them in the hot oil. Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

    Warm the Tortillas

    In a separate skillet, warm corn tortillas over medium heat until they are pliable, about 30 seconds on each side.

Pico de Gallo

    Prepare the Ingredients

    Chop the fresh tomatoes, red onion, jalapeño, and cilantro into small pieces.

    Combine the Ingredients

    In a bowl, combine chopped tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Pickled Red Onion

    Slice the Onion

    Thinly slice the red onion and place it in a jar.

    Pickle the Onion

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer, then pour over the sliced onions in the jar. Let it sit for at least 30 minutes.

Coleslaw

    Shred the Vegetables

    Shred the green cabbage and large carrot using a grater or food processor.

    Mix the Dressing

    In a large bowl, combine mayonnaise, apple cider vinegar, salt, and black pepper.

Hand-Cut Fries

    Wash and peel the potatoes, then cut them into fries.

    Heat vegetable oil in a deep fryer or large pot. Fry the cut potatoes in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.
