Prepare the Ingredients
Start by gathering all the ingredients. Chop the garlic finely and slice the Kalamata olives. Rinse the capers and set them aside.

Cook the Cod
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the cod fillets with salt and black pepper on both sides. Once the oil is hot, add the cod fillets and cook for about 4-5 minutes on each side until they are golden brown and cooked through. Remove the cod from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped garlic and sauté for about 1 minute until fragrant. Then, add the stewed tomatoes (with their juice), capers, and Kalamata olives. Stir to combine and let the mixture simmer for about 5 minutes.

Finish the Dish
Return the cooked cod fillets to the skillet with the sauce. Drizzle with lemon juice and let everything cook together for another 2-3 minutes so the cod absorbs the flavors. Sprinkle with fresh parsley just before serving.
