Salad Preparation

    Prepare the Bacon

    In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain, then chop into bite-sized pieces.

    Chop the Vegetables

    While the bacon is cooking, wash and chop the romaine lettuce into bite-sized pieces. Peel and dice the cucumber, and peel and shred the carrots. Cut the avocado in half, remove the pit, scoop out the flesh, and dice it.

    Combine the Ingredients

    In a large bowl, combine the chopped romaine, diced cucumbers, shredded carrots, diced avocado, and chopped bacon. Crumble the blue cheese over the top.

    Make the Dressing

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined.
