Method
Preparation of Chicken
- 1
Prepare the Chicken
Place chicken breasts between two pieces of plastic wrap and pound them to about 1/2 inch thickness.
- 2
Wrap with Prosciutto and Sage
Lay 1 slice of prosciutto on top of each chicken breast, followed by 2 sage leaves. Secure with toothpicks if necessary.
Cooking
- 3
Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side until golden brown. Remove and set aside.

- 5
Add Wine and Broth
Pour in the white wine and chicken broth, scraping the bottom of the pan to deglaze. Stir in lemon juice, salt, and pepper.
- 6
Simmer the Sauce
Bring the mixture to a simmer and let it reduce by half, about 5-7 minutes.
- 7
Finish the Dish
Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 3-5 minutes until chicken is cooked through.
