Cast Iron Baked Mac & Cheese Recipe

Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Cheese Sauce

    Make the Cheese Sauce

    In a large cast iron skillet or saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour, stirring continuously for about 2 minutes to create a roux.

    Add Milk

    Gradually whisk in the whole milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and begins to bubble, about 5-7 minutes.

    Incorporate Cheeses

    Reduce heat to low and add the shredded cheddar and Monterey Jack cheeses. Stir until the cheese is fully melted and the sauce is smooth. Season with salt, black pepper, garlic powder, and onion powder.

    Combine Pasta and Sauce

    Add the cooked cavatappi pasta to the cheese sauce in the skillet. Stir until the pasta is evenly coated with the cheese sauce.

Baking

    Prepare for Baking

    Preheat your oven to 350°F (175°C).

    Add Topping

    In a small bowl, mix the Ritz cracker crumbs with the melted butter. Sprinkle this mixture evenly over the mac and cheese in the skillet.

    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the topping is golden brown and crispy.
