Shrimp Preparation

Prepare the Shrimp
In a large bowl, combine the cornstarch, salt, and black pepper. Toss the peeled and deveined shrimp in the mixture until they are well coated.

Fry the Shrimp
In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated shrimp in batches, frying them for about 2-3 minutes on each side or until they are golden brown and cooked through. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil.

Make the Bam Bam Sauce
In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth and set aside.

Assemble the Wraps
Take a romaine lettuce leaf and place a few fried shrimp inside. Drizzle with the Bam Bam sauce, and top with chopped green onions and sesame seeds if desired.

Serve the Bam Bam shrimp wraps immediately, garnished with extra lime wedges if desired.
