Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.

Gradually add the cold water, one tablespoon at a time, mixing until the dough holds together without being sticky.

Chill the Dough
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat your oven to 375°F (190°C).

In a large bowl, whisk together the eggs, heavy cream, and milk until well combined. Stir in the shredded cheese, cooked bacon, spinach, bell peppers, onion, salt, black pepper, and fresh herbs.
Assembly and Baking

Roll Out Dough
On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into circles that will fit into your mini muffin tin.

Gently press the dough circles into the mini muffin tin and fill each with the prepared egg and filling mixture, leaving a little space at the top.
