Method
Preparing the Short Ribs

Season the Short Ribs
Rub the boneless short ribs with salt and black pepper on all sides.

Sear the Short Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs for about 3-4 minutes on each side until browned. Remove the short ribs and set aside.

Add Broth and Herbs
Stir in the beef broth, thyme, and bay leaves. Return the short ribs to the pot, ensuring they are submerged in the liquid.

Braise
Cover the pot and place it in a preheated oven at 300°F (150°C). Braise for 6 hours until the meat is tender and falls apart easily.
Making Garlic Mashed Potatoes

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, minced garlic, heavy cream, salt, and black pepper. Mash until creamy and smooth.
Sautéing Vegetables

Prepare the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced zucchini and bell pepper.

Sauté
Sauté the vegetables for about 5-7 minutes until tender. Season with salt and black pepper to taste.
Making Red Wine Demi-Glace

Combine Ingredients
In a small saucepan, combine red wine and beef broth. Bring to a boil and reduce heat to low.

Reduce Sauce
Simmer for about 15-20 minutes until the sauce thickens. Remove from heat and whisk in butter. Season with salt and black pepper to taste.
