Method

Preparing the Short Ribs

  1. 1

    Season the Short Ribs

Rub the boneless short ribs with salt and black pepper on all sides.

  2. 2

    Sear the Short Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs for about 3-4 minutes on each side until browned. Remove the short ribs and set aside.

  3. 3

    Sauté the Vegetables

In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add minced garlic and sauté for an additional 1 minute.

  4. 4

    Deglaze the Pot

Pour in the red wine, scraping up any browned bits from the bottom of the pot. Allow it to reduce by half, about 5-7 minutes.

  5. 5

    Add Broth and Herbs

Stir in the beef broth, thyme, and bay leaves. Return the short ribs to the pot, ensuring they are submerged in the liquid.

  6. 6

    Braise

Cover the pot and place it in a preheated oven at 300°F (150°C). Braise for 6 hours until the meat is tender and falls apart easily.

Making Garlic Mashed Potatoes

  1. 7

    Boil the Potatoes

In a large pot, add the cubed russet potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes or until tender.

  2. 8

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, minced garlic, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Sautéing Vegetables

  1. 9

    Prepare the Vegetables

In a large skillet, heat olive oil over medium heat. Add sliced zucchini and bell pepper.

  2. 10

    Sauté

Sauté the vegetables for about 5-7 minutes until tender. Season with salt and black pepper to taste.

Making Red Wine Demi-Glace

  1. 11

    Combine Ingredients

In a small saucepan, combine red wine and beef broth. Bring to a boil and reduce heat to low.

  2. 12

    Reduce Sauce

Simmer for about 15-20 minutes until the sauce thickens. Remove from heat and whisk in butter. Season with salt and black pepper to taste.
