Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper on both sides.

Prepare the Breading
In a shallow bowl, beat the eggs. In another bowl, mix the chopped walnuts and bread crumbs.

Coat the Chicken
Dip each chicken breast into the beaten eggs, allowing excess to drip off. Then coat in the walnut and breadcrumb mixture, pressing to adhere.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the chicken breasts for about 4-5 minutes on each side or until golden brown and fully cooked.

Make the Honey Dijon Sauce
In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, and olive oil until smooth.
