    Prepare Quinoa

    Rinse the quinoa under cold water. In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.

    Prepare Salad Ingredients

    In a large bowl, combine the cooked quinoa, baby kale, black beans (rinsed and drained), roasted corn, and diced local tomatoes.

    Make Dressing

    In a small bowl, whisk together olive oil, lime juice, salt, and black pepper. Pour over the salad and toss to combine.

    Serve

    Slice the avocado in half, remove the pit, and serve half an avocado on each plate alongside the salad. Garnish with cilantro if desired.
