Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Season the beef with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes.

Prepare the Slow Cooker
Transfer the seared beef to a slow cooker. Add the chopped carrots, quartered onions, minced garlic, thyme, rosemary, and beef broth.

Cook the Pot Roast
Cover the slow cooker and cook on low for 8-10 hours or until the beef is tender and easily shreds with a fork.

Serve
Remove the beef from the slow cooker and let it rest for a few minutes before slicing. Serve with carrots and onions, and drizzle with the cooking juices. Offer creamy horseradish sauce on the side if desired.
