Prepare the Breading Station
Set up three shallow dishes: one with flour mixed with salt, black pepper, and cayenne pepper; the second with beaten eggs mixed with milk; and the third with cornmeal.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Do not overcrowd the pan; fry in batches if necessary.

Drain and Serve
Remove the fried catfish from the oil and drain on paper towels. Serve hot with tartar or cocktail sauce on the side.
