Pork Roast Preparation

Prepare the Pork
Preheat your oven to 300°F (150°C).

Season the Pork
Pat the pork loin dry with paper towels. Rub the olive oil all over the pork, then season generously with salt, cracked black pepper, minced garlic, and chopped fresh rosemary.

Roast the Pork
Place the seasoned pork in a roasting pan and insert a meat thermometer. Roast for approximately 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Once cooked, remove the pork from the oven and let it rest for 15 minutes before slicing thinly.

Sauté the Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Cook the Spinach
Add the fresh spinach to the skillet and cook, stirring frequently, until wilted (about 2-3 minutes). Season with salt and black pepper to taste.
Sandwich Assembly

Assemble the Sandwich
Slice the hoagie rolls lengthwise. Layer the bottom half with slices of provolone cheese, followed by the sliced pork, sautéed spinach, roasted red peppers, and a generous sprinkle of pecorino romano cheese.

Close the sandwich with the top half of the hoagie roll and serve immediately.
