    Trim and Halve Brussels Sprouts

    Trim the stem ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut each Brussels sprout in half lengthwise.

    Prepare Garlic

    Peel the garlic cloves and finely slice them. Set aside.

    Fry Brussels Sprouts

    In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add the halved Brussels sprouts, cut side down, and season with salt and black pepper. Cook for about 5-7 minutes until they are golden brown and tender, stirring occasionally.

    Toast Garlic

    Once the Brussels sprouts are cooked, push them to the side of the skillet. Add the remaining 2 tablespoons of olive oil to the skillet and add the sliced garlic. Sauté the garlic for about 1-2 minutes until it is golden and fragrant, being careful not to burn it.

    Combine and Toss

    Once the garlic is toasted, stir the Brussels sprouts and garlic together in the skillet. Remove from heat and drizzle the fresh lemon juice over the mixture. Toss to combine.

    Add Cheese

    Sprinkle the Pecorino Romano cheese over the Brussels sprouts and toss again to coat evenly.
