    Prepare the Vegetables

    Chop the onion and garlic. Core and roughly chop the tomatoes.

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent, about 5 minutes.

    Cook the Tomatoes

    Add the chopped tomatoes to the pot and cook for another 10 minutes, stirring occasionally until they start to break down.

    Add Broth and Simmer

    Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.

    Blend the Soup

    Using an immersion blender, blend the mixture until smooth. Alternatively, you can transfer it to a blender in batches.

    Stir in Cream and Season

    Return the soup to the pot (if blended in batches). Stir in the heavy cream, fresh basil, salt, and black pepper. Heat through for an additional 5 minutes.

    Ladle the bisque into bowls and garnish with additional basil if desired.
