Prepare the Plantains
Preheat your oven to 425°F (220°C). Peel the ripe plantains and slice them diagonally into half-inch thick pieces.

Roast the Plantains
Arrange the plantain slices on a baking sheet lined with parchment paper. Brush with olive oil and sprinkle with salt. Roast in the preheated oven for about 20 minutes, flipping halfway through, until golden brown and tender.

Grill the Vegetables
While the plantains are roasting, heat a grill pan over medium-high heat. In a mixing bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and black pepper. Grill the vegetables for about 8-10 minutes, turning occasionally, until they are tender and have grill marks.

Once the plantains and vegetables are cooked, assemble the dish by placing the roasted plantains on a serving plate. Top with black beans and grilled vegetables. Add a dollop of sour cream on top.
