Method

Cooking Directions

  1. 1

    Sauté the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized, about 30-40 minutes.

  2. 2

    Add Garlic and Broth

Stir in the minced garlic and cook for an additional 1-2 minutes. Then add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer.

  3. 3

    Simmer the Soup

Reduce the heat to low and let the soup simmer for about 30 minutes to allow the flavors to meld together.

  4. 4

    Prepare the Baguette

While the soup is simmering, slice the baguette and toast the slices until golden brown.

  5. 5

    Serve with Cheese

Ladle the soup into bowls, place a slice of toasted baguette on top of each bowl, and sprinkle with Gruyère cheese. Broil in the oven until the cheese is melted and bubbly.
