Tequeños

Method

Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add warm water, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes.

  2. 2

    Shape the Tequeños

After resting, divide the dough into small pieces. Roll each piece into a thin rectangle, about 1/8 inch thick. Place a strip of cheese at one end and roll the dough around the cheese, sealing the edges by pinching them together.

  3. 3

    Fry the Tequeños

In a deep skillet or pot, heat the vegetable oil over medium heat. Once hot, carefully add the tequeños in batches, frying until golden brown (about 3-4 minutes each side). Remove them with a slotted spoon and drain on paper towels.
