Prepare the Horseradish Aioli

In a bowl, combine mayonnaise, prepared horseradish, lemon juice, minced garlic, and salt. Mix well and set aside.

Caramelize the Onions

In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onion and a pinch of salt. Cook for 15-20 minutes, stirring occasionally, until caramelized and golden brown.

Cook the Mushrooms

In the same skillet, add another tablespoon of olive oil. Add the sliced baby portabella mushrooms, season with salt and pepper, and cook for about 5-7 minutes until tender.

Cook the Filet Mignon Tips

Season the filet mignon tips with salt and pepper. In the skillet, increase the heat to medium-high, and add the seasoned tips. Cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your liking.

Assemble the Cheesesteaks

On each toasted roll, layer the cooked filet mignon tips, caramelized onions, and sautéed mushrooms. Top with provolone cheese and place under a broiler for 1-2 minutes until the cheese is melted.

Spread horseradish aioli on the top half of the rolls. Close the sandwiches and serve immediately with fries on the side.
