Bake the Potatoes

Preheat your oven to 400°F (200°C). Scrub the Russet potatoes under running water and pat them dry. Pierce each potato several times with a fork, then rub them with a little olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender.

Prepare the Bacon

While the potatoes are baking, cook the applewood smoked bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on paper towels to drain. Once cooled, crumble the bacon into small pieces.

Scoop and Season

Once the potatoes are baked and cool enough to handle, cut them in half lengthwise. Scoop out some of the flesh, leaving about 1/4 inch around the edges. Brush the insides of the potato skins with olive oil, and season with salt and black pepper.

Add Cheese and Bacon

Fill each potato skin with crumbled bacon and top with shredded cheddar cheese. Place the skins on a baking sheet.

Bake Again

Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve

Once done, remove the potato skins from the oven and let them cool slightly. Serve warm with a dollop of sour cream and a sprinkle of chopped green onions on top.
