Preparation

    Prepare the Vegetables

    Wash and chop all vegetables into bite-sized pieces. Slice the bell peppers, carrots, and onion. Cut the broccoli into small florets, and slice the mushrooms. Rinse the snow peas and set aside.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, sesame oil, cornstarch, water, grated ginger, sugar, and black pepper until well combined. Set aside.

    Stir-Fry the Vegetables

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced onions and minced garlic, and sauté for about 1-2 minutes until fragrant.

    Add Remaining Vegetables

    Add the bell peppers, broccoli, carrots, snow peas, and mushrooms to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.

    Add Sauce

    Pour the prepared sauce over the stir-fried vegetables. Stir well to coat all the vegetables evenly. Cook for another 2-3 minutes until the sauce thickens slightly.

    Serve

    Once the vegetables are cooked and the sauce has thickened, remove from heat. Serve hot, garnished with sesame seeds and sliced green onions if desired.
