Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the head and innards, and slice the body into rings about 1/2 inch wide.

    Set Up Breading Station

    In one bowl, mix the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In a second bowl, beat the eggs. In a third bowl, place the breadcrumbs.

    Bread the Calamari

    Dredge each calamari ring in the flour mixture, dip into the beaten eggs, and finally coat with breadcrumbs. Set aside on a plate.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Calamari

    Fry the calamari rings in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Heat Olive Oil

    In a saucepan, heat olive oil over medium heat.

    Sauté Garlic

    Add minced garlic to the pan and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

    Simmer the Sauce

    Reduce heat and let the sauce simmer for 15-20 minutes, stirring occasionally. Adjust seasoning if needed.
