Brisket Preparation

Season the Brisket
In a small bowl, combine salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture all over the brisket, making sure to cover all sides. Let the brisket sit at room temperature for about 30 minutes to allow the flavors to penetrate.

Sear the Brisket
In a large skillet, heat olive oil over medium-high heat. Once hot, add the brisket and sear it on all sides until browned, about 3-4 minutes per side. Remove from heat and set aside.

Slow Cook the Brisket
Transfer the seared brisket to a slow cooker. Cover and cook on low for 8-10 hours, or until the brisket is tender and easily shreds with a fork.

Make the BBQ Sauce
In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to combine and bring to a simmer over medium heat.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally, until slightly thickened.

Slice and Serve
Once the brisket is done, remove it from the slow cooker and let it rest for 15 minutes. Slice against the grain and serve with the BBQ sauce drizzled on top.
