Preparation

    Prepare the Veal

    Season the veal cutlets with salt and black pepper on both sides. Dredge them in all-purpose flour, shaking off any excess flour.

    Cook the Veal

    In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the veal cutlets and cook for about 3-4 minutes on each side until golden brown. Remove the veal from the skillet and set aside.

    Sauté Shallots and Mushrooms

    In the same skillet, add the remaining tablespoon of butter. Add the minced shallots and sauté for about 2 minutes until softened. Then, add the sliced mushrooms and cook for an additional 4-5 minutes until the mushrooms are browned.

    Deglaze the Pan

    Pour in the Marsala wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let it cook for about 2-3 minutes.

    Add Broth and Thicken the Sauce

    Stir in the beef or chicken broth and allow the sauce to cook for another 5 minutes until slightly thickened.

    Combine and Serve

    Return the veal cutlets to the skillet and spoon the sauce over them. Let them heat through for about 2 minutes. Garnish with chopped parsley before serving.
