Pasta Preparation

Boil the Pasta
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, typically about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water and set it aside.

Drain the Pasta
Drain the spaghetti in a colander, shaking off any excess water.

Mix Eggs and Cheese
In a medium bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper to taste and set aside.

Cook Pancetta
In a large frying pan over medium heat, cook the pancetta until it is crispy, about 4-5 minutes. Stir occasionally to ensure even cooking.

Combine with Pasta
Once the pancetta is cooked, add the drained spaghetti to the frying pan and toss well to coat the pasta with the pancetta fat.

Add Egg Mixture
Remove the frying pan from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously to combine. The heat from the pasta will gently cook the eggs, creating a creamy sauce. If necessary, add reserved pasta water a little at a time to achieve desired consistency.

Garnish and Serve
