Clean the Kidneys
Begin by cleaning the lamb kidneys. Remove any membranes and fat, and cut them in half lengthwise. Rinse under cold water and pat dry with paper towels.

Cook the Ingredients
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add Tomatoes and Sherry
Add the chopped tomatoes to the skillet along with the dry sherry. Stir well to combine, and bring the mixture to a gentle simmer.

Add the bay leaves, salt, and black pepper to the tomato sauce. Allow the sauce to simmer for about 10 minutes, stirring occasionally.

Add the cleaned kidneys to the skillet. Stir to coat them in the sauce, and cook for an additional 5-7 minutes, or until the kidneys are tender and cooked through.
