    Clean the Fish

    Rinse the red snapper under cold water and pat dry with paper towels. Make sure to remove any scales and internal organs if not already done.

    Marinate the Fish

    In a bowl, mix lemon juice, salt, and black pepper. Rub this mixture all over the fish, including inside the cavity. Allow it to marinate for at least 30 minutes.

Vegetable Mixture

    Prepare the Vegetables

    Chop the red bell pepper, onion, garlic, and tomatoes into small pieces.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent. Then, add the bell pepper and tomatoes and cook for about 5-7 minutes until softened. Stir in paprika and oregano.

Baking

    Assemble the Dish

    Preheat your oven to 180°C (350°F). Place the marinated fish on a baking dish and spoon the sautéed vegetable mixture over the top and inside the cavity.

    Bake the Fish

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil for the last 10 minutes for a golden finish.

    Garnish and Serve

    Once baked, remove the fish from the oven, garnish with fresh parsley, lemon wedges, and cilantro if desired. Serve hot.
