Panna Cotta Base

Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5-10 minutes until it blooms (absorbs the water and swells).

Heat Cream and Sugar
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir gently until the sugar is dissolved and the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin mixture until fully dissolved. Make sure there are no lumps.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow the panna cotta to cool at room temperature for about 30 minutes.

Chill
Cover the cups with plastic wrap and refrigerate for at least 4 hours or until set.
Berry Sauce

Prepare Berries
In a saucepan, combine the mixed berries and granulated sugar. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries soften and the sugar dissolves.

Add Lemon Juice
Remove from heat and stir in the lemon juice. Let the sauce cool slightly before serving.

Serve
Once the panna cotta has set, carefully remove it from the molds and serve topped with the berry sauce.
